Why did PS/PS2 graphics look amazing on CRT TVs back in the day? Is it just nostalgia or low standards or did low resolution output on CRT really made them look good?

Its not low expectations, infact we had lower standards then today, thanks to the advancements in graphics, at some point we only had sprites that was limited to the amount of room on a storage device. Now a days we are only limited by a graphics creator. So things looked better and better, and we expect more now then back when ps1 games came out. The best example in my opinion of an old idea being renewed is the difference between the original legend of zelda vs breathe of the wild.

It's nostalgia. If you really loved a game 20 years ago, but haven't played it for just as long, your mind will build it up in some way, until it barely even resembles what the game actually looked like. Then you go and actually play it, and while you may still enjoy it, it'll never look as good. There are some exceptions, like games with static, drawn backgrounds. Like Code Veronica.

Jackie Chan did the Mo-Cap for this one martial arts game that looked fucking fantastic to me at the time, so I think it's partially nostalgia and the constant drive to push the system to it's max.

CRT's do not have a set resolution, and can handle any resolution. Flat-screen tvs must scale any non-native resolution.
