I would say it's a toss up between pozole verde and Mongolian beef. I look at 100s of videos and recipes and then make make things without following the recipes and constantly try to find better methods and flavors to add. The pozole is all about the sofrito that I make fresh and the Mongolian beef is all about the oyster sauce and using cornstarch a couple different ways.

Cajun chicken pasta. Really simple dish if I'm honest. But throw in a ton of spices (Cajun primarily the key ingredient) cream, chicken, peppers and it really did sorta work! Spontaneity at its finest, that's how I learned.
