I would imagine the smaller the menu the less expertise your cooks need. Also, it just adds more workload that a fast restaurant doesn't need when it comes to something that will likely only marginally increase their sales. They would also need to order all the ingredients and pay money that may not be paid back. That's my guess, could be wrong. Now I'm hungry.
