I made a few mistakes while trying to keep up with her workload on top of my own workload, and although some of the mistakes put the company at great risk, I did everything in my power to rectify them as soon as I was made aware, and each one was resolved at no cost to the company. Next time ask for help when you aren't sure. Also, are you sure you aren't one of those people that try to pass the buck? I'm asking as what you did is usually forgivable. If you are having this talk so soon, you must not be likable or getting on with everyone in your office.

talk to a lawyer. ask them about the legality of recording any and all conversations you have with your employees and coworkers. if you can prove harassment, you've got yourself a lawsuit. even if it doesn't go to court, they'll settle. that, and start looking for a new job.

If you willingly leave the company, you're not entitled unemployment. Period. If they fire you, you are entitled to it. She's lying to you, trying to get you to walk away so they don't have to pay you unemployment. Get yourself fired. Continue doing what you're doing. I'm terribly sorry you're in a bad situation like this, my friend.
